Oven-Baked Chicken Caesar Focaccia Delight
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup Parmesan cheese, grated
- 2 teaspoons Dijon mustard
- 3 anchovy fillets, finely minced
- 1/2 cup Caesar dressing
- 1 head of Romaine lettuce, chopped
- 2 tablespoons lemon juice
- Salt and black pepper to taste
- 4 slices of Focaccia bread
- Olive oil for drizzling
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare Chicken
Place the chicken breasts on a baking sheet lined with parchment paper. In a small bowl, mix together the grated Parmesan cheese and minced anchovies. Spread a thin layer of Dijon mustard on each chicken breast, then evenly coat with the Parmesan-anchovy mixture. Season with a pinch of salt and black pepper.
3. Bake Chicken
Drizzle a small amount of olive oil over each chicken breast. Place the baking sheet into the preheated oven and bake for approximately PT25M (25 minutes) or until the chicken is fully cooked and golden-brown on the exterior.
4. Prepare Caesar Salad
In a large bowl, combine the chopped Romaine lettuce with the Caesar dressing and lemon juice. Toss until the lettuce is well-coated and set aside.
5. Toast Focaccia Bread
Lightly drizzle olive oil on each slice of Focaccia bread. Place them onto a separate baking sheet and toast in the oven for about PT5M (5 minutes) until the edges are slightly crispy.
6. Assemble the Dish
Once the chicken is done, remove it from the oven and let it rest for a few minutes. Slice each chicken breast into even strips. Place each toasted Focaccia slice on a serving plate, top with a generous portion of Caesar salad, and arrange the chicken strips on top.
