Oven-Baked Chicken Pot Pie with Buttery Crust



Ingredients



- 1 lb chicken breast, diced
- 2 medium potatoes, peeled and chopped
- 2 carrots, peeled and sliced
- 1 cup peas
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp all-purpose flour
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
- 1 buttery pie crust, store-bought or homemade

Instructions



1. Preheat Oven
Preheat your oven to 400°F (205°C).

2. Prepare Chicken and Vegetables
In a large skillet over medium heat, add olive oil. Once hot, add diced chicken. Cook for about 5-7 minutes until the chicken is browned and fully cooked. Remove from the skillet and set aside.

3. Sauté Aromatics
In the same skillet, add chopped onion and garlic. Sauté for 3-4 minutes until the onion becomes translucent.

4. Combine Vegetables
Add chopped potatoes and sliced carrots to the skillet. Stir well and cook for another 5 minutes.

5. Make the Sauce
Sprinkle flour over the vegetables, stirring constantly for 1 minute. Pour in chicken broth gradually while stirring to avoid lumps. Add heavy cream, fresh thyme, salt, and pepper. Simmer for 5 minutes until the sauce thickens.

6. Add Peas and Chicken
Stir in peas and the cooked chicken. Mix thoroughly to ensure all ingredients are coated in the sauce.

7. Assemble the Pie
Pour the mixture into a 9-inch pie dish. Gently place the buttery pie crust over the top, sealing the edges. Cut a few slits on the crust to allow steam to escape.

8. Bake
Place the pie in a preheated oven. Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbly.

9. Cool and Serve
Allow the pie to cool for about 10 minutes before serving to ensure it sets and is easier to cut.
