Oven-Baked Chicken Pot Pie with Flaky Crust
Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups chicken broth
- 4 tablespoons unsalted butter
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pre-made pie crusts (top and bottom crust)
Instructions
1. Preheat the Oven:
Preheat your oven to 425°F (220°C).
2. Cook the Chicken:
In a medium saucepan, place the chicken breasts and cover with the chicken broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 15 minutes or until the chicken is cooked through. Remove the chicken, let it cool slightly, and chop it into bite-sized pieces. Reserve the chicken broth.
3. Prepare the Roux:
In the same saucepan, melt 4 tablespoons of unsalted butter over medium heat. Gradually whisk in 1/3 cup of all-purpose flour, ensuring there are no lumps. Cook for about 2 minutes until the mixture is golden brown.
4. Make the White Sauce:
Slowly add the reserved chicken broth to the roux, whisking constantly to achieve a smooth consistency. Cook until the mixture thickens, about 5 minutes. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
5. Combine Ingredients:
Add the chopped chicken to the sauce, mixing well to ensure the chicken is thoroughly coated with the sauce.
6. Assemble the Pot Pie:
Lay one pie crust in the bottom of a 9-inch pie dish. Pour the chicken and sauce mixture into the crust. Cover with the second pie crust, sealing the edges by pinching them together. Cut small slits on the top crust to allow steam to escape.
7. Bake:
Place the pie dish on a baking sheet to catch any potential drips. Bake in the preheated oven for 30 to 35 minutes, or until the crust is golden brown and crispy.
8. Rest and Serve:
Allow the pot pie to cool for about 10 minutes before serving. This cooling time helps the filling set and makes slicing easier.
