Ingredients



Dry Ingredients:

- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar

Wet Ingredients:

- 2 large eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 3/4 cups buttermilk

Topping:

- 1 cup cranberry sauce
- 1/2 cup fresh cranberries

Lemon Butter:

- 1/2 cup unsalted butter, softened
- 2 tablespoons lemon juice
- 1 tablespoon sugar

Instructions



1. Preheat Oven:
- Preheat your oven to 375°F (190°C).

2. Prepare the Batter:
- In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, baking powder, salt, and sugar.
- In a separate bowl, beat the eggs until frothy. Add the vegetable oil, vanilla extract, and buttermilk, whisking until combined.
- Slowly pour the wet ingredients into the dry ingredients, gently mixing until just combined. Some lumps are okay; do not overmix.

3. Prepare the Topping:
- In a small bowl, combine the cranberry sauce and fresh cranberries. Set aside for topping.

4. Create Lemon Butter:
- In a medium bowl, blend the softened butter with lemon juice and sugar until smooth. Transfer to the fridge to let it set while you bake the pancakes.

5. Bake the Pancakes:
- Lightly grease a 9x13-inch baking dish. Pour the pancake batter evenly into the dish.
- Using a spoon, swirl the cranberry mixture over the batter, creating a marbled effect.
- Bake in the preheated oven for 20-25 minutes until the top is golden and a toothpick inserted into the center comes out clean.

6. Serve:
