Oven-Baked Curry Chicken Casserole with Rice and Egg Noodles
Ingredients
- 2 cups rice, uncooked
- 1 pound chicken breast, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 can (10.5 oz) cream of chicken soup
- 1 tablespoon curry powder
- 1/2 cup white wine
- 2 cups cooked egg noodles
- 1 cup cauliflower florets
- 1 cup mushrooms, sliced
- 1 sleeve Ritz crackers, crushed
- 1/2 cup panko breadcrumbs
- 1/4 cup fried shallots
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F.
2. Prepare the Rice:
- Cook the rice according to package instructions. Set aside.
3. Cook the Chicken:
- In a skillet, heat olive oil over medium heat.
- Season the chicken pieces with salt and pepper.
- Sauté the chicken until browned and cooked through, approximately 8-10 minutes. Remove and set aside.
4. Prepare the Vegetables:
- In the same skillet, add broccoli, cauliflower, and mushrooms.
- Cook for 5-7 minutes until slightly tender.
5. Create the Sauce:
- In a large mixing bowl, combine the cream of chicken soup, curry powder, and white wine. Stir well.
6. Assemble the Casserole:
- In a large casserole dish, layer the cooked rice, followed by the chicken pieces.
- Add the cooked egg noodles, then spread the vegetable mixture evenly.
- Pour the soup mixture over the top and gently mix to combine.
7. Prepare Topping:
- In a separate bowl, combine crushed Ritz crackers, panko breadcrumbs, and fried shallots.
- Evenly sprinkle the topping mixture over the casserole.
8. Bake:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbling.
9. Serve:
- Let the casserole rest for a few minutes before serving. Enjoy this comforting dinner with a side salad if desired.
