Oven-Baked Dill Brined Chicken with Basmati Rice



Ingredients



Main Ingredients
- 1 tablespoon vegetable oil
- 8 boneless skinless chicken thighs
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper

Brine and Sauce
- 1 cup dill pickle brine
- 1 cup chicken broth
- 1 cup plain Greek yogurt

Rice and Garnish
- 1 cup basmati rice
- 1 cup vegetable broth
- 4 green onions, thinly sliced
- 3 cloves garlic, minced
- 4 dill pickles, finely chopped
- 2 tablespoons fresh dill, chopped

Instructions



1. Marinate the Chicken (Prep: PT15M, Marinate: PT1H)
- Place the chicken thighs in a large, non-reactive bowl. Add dill pickle brine, ensuring the chicken is fully submerged. Cover and refrigerate for at least 1 hour.

2. Prepare the Rice (Cooking: PT25M)
- In a medium saucepan, heat the vegetable oil over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
- Stir in basmati rice and toast for 2 minutes, coating with oil and garlic.
- Pour in the vegetable broth, bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed and rice is tender. Fluff with a fork and set aside.

3. Preheat the Oven
- Preheat your oven to 375°F (190°C).

4. Cook the Chicken (Cooking: PT30M)
- Remove chicken from brine and pat dry with paper towels. Season with kosher salt and ground black pepper.
- In a large oven-safe skillet, heat vegetable oil over medium-high heat. Add chicken thighs and sear each side for 2-3 minutes until golden brown.
- Add chicken broth to the skillet, then transfer it to the preheated oven. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

5. Make the Sauce
- In a small bowl, combine plain Greek yogurt with chopped dill pickles and fresh dill. Mix well and set aside.

6. Assemble and Serve
- On a large platter, arrange the cooked basmati rice. Place the chicken thighs over the rice and drizzle with the dill yogurt sauce. Garnish with sliced green onions and additional dill if desired.
