Oven-Baked Dill Pickle Spiced Potato Crisps



Ingredients



- 4 large russet potatoes, washed and thinly sliced
- 3 tablespoons dill pickles, finely chopped
- 2 teaspoons smoked paprika
- 1 teaspoon turmeric (optional)
- 3 tablespoons vegan mayonnaise (optional, for dipping)
- Salt and pepper, to taste
- 2 tablespoons olive oil

Instructions



1. Preheat the Oven: Set your oven to 425°F (220°C) and allow it to fully preheat before cooking.

2. Prepare the Potatoes: Slice the potatoes into thin rounds, about 1/8 inch thick, using a sharp knife or a mandolin for uniformity. Ensure the slices are washed to remove any excess starch and then pat them dry with a clean kitchen towel.

3. Season the Potatoes: In a large mixing bowl, combine the potato slices with olive oil, smoked paprika, turmeric (if using), salt, and pepper. Toss the slices well to ensure an even coating of spices.

4. Arrange on Baking Sheets: Line two large baking sheets with parchment paper. Arrange the potato slices in a single layer, making sure they do not overlap, to ensure even cooking.

5. Bake the Crisps: Place the baking sheets in the preheated oven and bake for 25 minutes, or until the crisps are golden brown and edges appear crispy. Flip the potato slices halfway through the baking time for an even crunch.

6. Prepare the Pickle Garnish: While the potatoes are baking, finely chop the dill pickles and set them aside. These will be used to garnish the finished crisps.

7. Serving: Once baked, remove the crisps from the oven and immediately sprinkle with the chopped dill pickles for a burst of flavor. Serve warm with vegan mayonnaise on the side for dipping, if desired.
