Oven-Baked Eggplant Parmesan Delights
Ingredients
- 2 medium eggplants
- 1 cup all-purpose flour
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 3 large eggs
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- Cooking spray
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon balsamic vinegar
Instructions
1. Prepare the Eggplants:
- Preheat your oven to 375°F.
- Slice the eggplants into 1/4-inch thick rounds.
- Sprinkle a little salt on each slice and let rest on paper towels for 20 minutes to drain excess moisture.
2. Coating Preparation:
- In a shallow bowl, place the flour.
- In a second bowl, beat the eggs together.
- In a third bowl, combine the breadcrumbs, Parmesan cheese, Italian seasoning, and garlic powder.
3. Coat the Eggplants:
- Pat eggplant slices dry.
- Dip each slice into the flour, ensuring it’s evenly coated. Shake off any excess.
- Next, dip the floured slices into the beaten eggs.
- Finally, press each slice into the breadcrumb mixture, covering all sides.
4. Bake the Eggplants:
- Lightly spray a large baking sheet with cooking spray.
- Arrange the coated eggplant slices on the baking sheet in a single layer.
- Bake in the preheated oven at 375°F for 15 minutes.
- Flip each slice and bake for another 10 minutes until golden brown.
5. Assemble the Parmesan Dish:
- In a baking dish, spread a thin layer of marinara sauce.
- Place a layer of baked eggplant slices over the sauce.
- Spoon more marinara sauce over the slices and sprinkle with mozzarella cheese.
- Repeat layers, ending with mozzarella cheese on top.
6. Final Bake:
- Bake the assembled dish in the oven at 375°F for 20 minutes more, until the cheese bubble and turns golden.
7. Garnish and Serve:
- Remove from the oven and let it rest for 5 minutes.
- Drizzle a little balsamic vinegar over the top.
- Garnish with freshly chopped parsley and basil before serving.
