Oven-Baked Enchilada Casserole with Dr Pepper-Infused Ground Beef



Ingredients



Main Components:
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1 tablespoon Better than Beef Bouillon
- 1 cup Dr Pepper
- 1/2 cup water

Sauce & Filling:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup beef stock
- 1 cup red enchilada sauce
- 1 teaspoon chili powder
- 6 flour tortillas
- 1 cup Mexican cheese blend, shredded
- 1/2 cup beans (black or pinto), drained and rinsed
- 1/2 cup rice or quinoa, cooked

Toppings:
- 1/2 cup sour cream
- 1/2 cup pico de gallo
- 1/2 cup guacamole
- 1/4 cup salsa
- 1/4 cup tomatillo dressing
- 1 small red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 cups lettuce, chopped

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).

2. Cook the Ground Beef:
- In a skillet over medium heat, brown the ground beef.
- Drain any excess fat.
- Add 2 tablespoons of taco seasoning, 1 tablespoon of Better than Beef Bouillon, 1 cup of Dr Pepper, and 1/2 cup water.
- Simmer for about 10 minutes until the liquid reduces and beef is well seasoned. Set aside.

3. Prepare the Sauce:
- In a saucepan over medium heat, melt 2 tablespoons of butter.
- Whisk in 2 tablespoons of flour to form a roux, cooking for about 1 minute.
- Gradually add 1 cup beef stock while whisking, followed by 1 cup red enchilada sauce and 1 teaspoon of chili powder.
- Simmer until thickened, stirring occasionally, for about 5 minutes.

4. Assemble the Casserole:
- Lightly grease a 9x13-inch baking dish.
- Spread a thin layer of the enchilada sauce at the bottom of the dish.
- Lay down 2 flour tortillas to cover the base.
- Add a layer of the Dr Pepper-infused beef, a portion of the beans, and a bit of cooked rice or quinoa.
- Sprinkle with a portion of the Mexican cheese blend.
- Repeat layers with remaining tortillas, beef, beans, rice, and cheese, ending with cheese on top.

5. Bake:
- Cover the dish with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

6. Prepare Toppings:
- While the casserole bakes, prepare your toppings.
- Mix the sour cream with the tomatillo dressing for an easy creamy topping.
- Combine the red onion and cilantro in a small bowl.

7. Serve:
- Remove from oven and let it cool slightly.
- Top with pico de gallo, guacamole, salsa, the mixed sour cream and tomatillo dressing, red onion and cilantro, and chopped lettuce.
- Slice and serve warm.
