Oven-Baked Feta and Roasted Red Pepper Breakfast Tart



Ingredients



- 1 1/4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup unsalted butter, cold and diced
- 2 large eggs
- 1/4 cup Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1/2 cup roasted red peppers, chopped
- 2 cloves garlic, minced
- 1/3 cup tomato sauce
- 1 tablespoon extra virgin olive oil
- 1/4 cup light cream cheese
- 1 tablespoon honey
- 1/4 cup basil leaves, chopped
- 1 lemon, zested

Instructions



1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Prepare the Dough:
In a large bowl, combine 1 1/4 cups of flour, 1 teaspoon salt, and 1 teaspoon baking powder. Add the cold, diced butter and mix until the mixture resembles coarse crumbs.

3. Form the Dough:
In a separate bowl, whisk together 1 egg and 1/4 cup Greek yogurt. Add this to the flour mixture and stir until the dough forms a ball. Wrap in plastic wrap and refrigerate for 10 minutes.

4. Prepare the Filling:
In a medium bowl, mix 1/2 cup crumbled feta cheese, 1/2 cup chopped roasted red peppers, 2 cloves minced garlic, 1/3 cup tomato sauce, and 1 tablespoon extra virgin olive oil.

5. Roll Out the Dough:
On a floured surface, roll out the dough into a 12-inch circle. Transfer it to a parchment-lined baking sheet.

6. Assemble the Tart:
Spread the feta and pepper mixture over the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as you go.

7. Bake the Tart:
Bake in the preheated oven for 35-40 minutes, until the crust is golden brown.

8. Prepare the Topping:
While the tart bakes, in a small bowl, mix 1/4 cup light cream cheese, 1 tablespoon honey, the zest of 1 lemon, and 1 tablespoon chopped basil.

9. Finish the Tart:
Remove the tart from the oven and let it cool slightly. Drizzle with the cream cheese mixture and garnish with the remaining basil leaves.
