Oven-Baked Fish & Potato Breakfast Delight
Ingredients
- 2 fillets fresh fish (e.g., tilapia or cod)
- 2 large potatoes, peeled and thinly sliced
- 2 tbsp olive oil
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp paprika
- 1 tbsp fresh parsley, chopped
- Optional: 1 tbsp melted butter
Instructions
1. Preheat the Oven:
Set your oven to 400°F (204°C) to preheat.
2. Prepare the Potatoes:
- On a wooden cutting board, slice potatoes into uniform, thin slices. Use sharp knives for safety and precision.
- In a large bowl, combine potato slices, 1 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp thyme.
- Toss well using wooden utensils to ensure even coating.
3. Arrange the Potatoes:
- In a cast-iron cookware piece, layer the potato slices evenly. Overlapping slightly is fine.
- Place the cast-iron cookware in the oven and bake for 15 minutes.
4. Prepare the Fish:
- Pat the fish fillets dry using paper towels. Season them with the remaining salt, black pepper, thyme, and paprika.
- Place the fillets on a separate nonstick pan.
5. Assemble the Dish:
- Once the potatoes have baked for 15 minutes, remove the cast-iron cookware from the oven.
- Push the potatoes to the sides and layer the fillets on top.
- Add lemon slices and minced garlic over the fish. Drizzle the remaining 1 tbsp olive oil (or melted butter if desired) over the top.
6. Bake the Dish:
- Return the cast-iron cookware to the oven.
- Bake for an additional 15–20 minutes, until the fish is opaque and flakes easily with a fork and potatoes are golden brown.
7. Garnish and Serve:
- Carefully remove the cookware from the oven using oven mitts.
- Garnish with freshly chopped parsley before serving.
