Oven-Baked Gnocchi with Creamy Sausage and Veggie Medley
Ingredients
- 1 package (16 oz) Priano Tomato Basil or Alfredo Stuffed Gnocchi
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1 pound sausage (Italian or your choice), sliced
- 1 cup mixed veggies (such as bell peppers, zucchini, or broccoli), chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter
- 6-8 fresh sage leaves
Instructions
1. Preheat the Oven
Set your oven to 375°F (190°C) and allow it to preheat while you prepare the ingredients.
2. Prepare the Sausage and Vegetables
In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook for about 5-7 minutes until browned. Remove the sausage from the skillet and set aside.
Add diced onions and minced garlic to the same skillet. Sauté for 3-4 minutes until onions become translucent. Stir in the mixed veggies and cook for an additional 5 minutes until they soften. Season with salt and black pepper.
3. Combine Ingredients
Return the sausage to the skillet and pour in the heavy cream. Allow the mixture to simmer for about 3 minutes. Stir in the tomato basil or Alfredo stuffed gnocchi, ensuring they are evenly coated with the creamy mixture.
4. Assemble and Bake
Transfer the sausage and veggie mixture into a greased baking dish. Dot with butter and sprinkle with grated Parmesan cheese. Spread the shredded mozzarella cheese evenly on top and place sage leaves over the cheese.
5. Bake
Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
6. Serve
Let the dish cool slightly before serving.
