Oven-Baked Greek Meatballs with Lemon Herb Potatoes
Ingredients
For the Potatoes:
- 4 medium Russet potatoes, peeled and cut into wedges
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/4 cup low-sodium chicken broth
- 2 tablespoons lemon juice
For the Meatballs:
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup Panko breadcrumbs
- 1 large egg
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1 pound ground beef
- 4 ounces Feta, crumbled
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (about 200°C).
2. Prepare the Potatoes:
- In a large mixing bowl, combine the potato wedges with the extra-virgin olive oil, dried oregano, kosher salt, and ground black pepper. Toss to ensure the potatoes are evenly coated.
- Transfer the potatoes to a large baking dish. Pour the chicken broth and lemon juice evenly over the potatoes. Set aside.
3. Make the Meatball Mixture:
- In a large bowl, combine the chopped onion, minced garlic, Panko breadcrumbs, egg, parsley, and mint. Mix well until combined.
- Add the ground beef, crumbled Feta, kosher salt, and ground black pepper to the onion mixture. Use your hands to gently mix until all ingredients are just combined. Avoid overmixing to ensure the meatballs remain tender.
4. Form the Meatballs:
- Shape the mixture into golf ball-sized meatballs, about 1 1/2 inches in diameter. Place the meatballs on top of the prepared potatoes in the baking dish.
5. Bake:
- Place the baking dish in the preheated oven and bake for 30-35 minutes, until the meatballs are cooked through and the potatoes are tender. You can check the internal temperature of the meatballs, ensuring it reaches at least 160°F (70°C).
6. Serve:
- Remove from the oven and let it rest for a few minutes. Serve the meatballs and potatoes garnished with additional fresh parsley if desired.
