Oven-Baked Harvest Meatballs with Pumpkin Pecan Glaze

Ingredients

Meatballs:
- 1/2 pound ground turkey
- 1/2 pound ground hamburger
- 1/4 cup cooked ham, finely chopped
- 1/4 cup cooked chicken, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 egg
- 1/2 cup breadcrumbs

Pumpkin Pecan Glaze:
- 1/2 cup canned pumpkin
- 1/4 cup pecan halves, finely chopped
- 1 tablespoon lunch meat, finely diced
- 1 tablespoon soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1/4 teaspoon ground cinnamon

Instructions

1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease with a light spray of cooking oil.

2. Prepare the Meatballs:
In a large bowl, combine the ground turkey, ground hamburger, finely chopped cooked ham, and chicken. Add salt, pepper, garlic powder, and onion powder.

3. Bind the Mixture:
Add the egg and breadcrumbs to the bowl. Mix everything thoroughly until all ingredients are well incorporated.

4. Shape the Meatballs:
Using your hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet, ensuring they are evenly spaced.

5. Bake the Meatballs:
Place the meatballs in the preheated oven and bake for 20 minutes, turning them halfway through to ensure even cooking.

6. Prepare the Pumpkin Pecan Glaze:
In a separate saucepan, combine the pumpkin, finely chopped pecans, lunch meat, soy sauce, brown sugar, apple cider vinegar, and ground cinnamon.

7. Simmer the Glaze:
Place the saucepan over medium heat and bring to a simmer. Stir the glaze occasionally for 8-10 minutes, allowing the flavors to meld and the sauce to thicken slightly.

8. Glaze the Meatballs:
Once the meatballs have finished baking, remove them from the oven. Brush each meatball generously with the pumpkin pecan glaze.

9. Final Bake:
Return the glazed meatballs to the oven and bake for an additional 5 minutes to set the glaze.

10. Serve:
Transfer to a serving platter and enjoy warm as a delectable snack.
