Oven-Baked Herb-Crusted Chicken with Roasted Vegetables
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- 2 large eggs
- 2 tablespoons olive oil
For the Roasted Vegetables:
- 3 medium carrots, peeled and sliced
- 2 medium zucchinis, sliced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 red onion, sliced
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F (200°C).
2. Prepare the Herb Crust:
- In a medium bowl, combine breadcrumbs, grated Parmesan cheese, chopped parsley, thyme, rosemary, salt, and pepper.
- In another bowl, beat the eggs.
3. Coat the Chicken:
- Dip each chicken breast in the beaten eggs, ensuring both sides are coated.
- Press the chicken breasts into the breadcrumb mixture, thoroughly coating each side.
4. Preparing for Baking:
- Place the coated chicken breasts in a baking dish greased with olive oil.
- Drizzle 2 tablespoons of olive oil evenly over the chicken.
5. Roasting Vegetables:
- In a large bowl, toss sliced carrots, zucchinis, bell peppers, and onion with olive oil, salt, and pepper.
- Spread the vegetables evenly on a baking sheet.
6. Bake:
- Place both the chicken and vegetables in the preheated oven.
- Bake the chicken for about 25-30 minutes or until the internal temperature reaches 165°F (75°C) and is no longer pink.
- Roast the vegetables for about 25 minutes or until tender and lightly browned.
7. Rest and Serve:
- Let the chicken rest for a few minutes before slicing.
- Serve the chicken breasts alongside the roasted vegetables.
