Oven-Baked Herb-Crusted Steak with Red Wine Cream Sauce



Ingredients


- 4 (8 oz each) beef steaks
- 2 tablespoons olive oil
- 2 teaspoons steak seasoning
- 4 cloves garlic, minced
- 2 tablespoons fresh herbs, chopped (such as parsley and chives)
- 1 cup red wine
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 2 sprigs rosemary
- 2 sprigs thyme

Instructions



1. Preheat the Oven:
Preheat your oven to 400°F (200°C).

2. Season the Steaks:
- Pat the steaks dry with paper towels.
- Rub each steak with olive oil and generously season both sides with steak seasoning.

3. Sear the Steaks:
- Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat.
- Add steaks and sear for 2-3 minutes on each side until they develop a golden-brown crust.

4. Add Aromatics:
- Add the minced garlic, rosemary, and thyme to the skillet along with 2 tablespoons of butter.
- Sauté for 1 minute to infuse the flavors.

5. Roast in the Oven:
- Transfer the skillet to the preheated oven.
- Roast the steaks for 6-8 minutes, or until they reach your desired level of doneness (e.g., 130°F for medium-rare using a meat thermometer).

6. Rest the Steaks:
- Remove the steaks from the oven and transfer them to a plate.
- Cover loosely with aluminum foil and let them rest for 5 minutes.

7. Prepare Red Wine Cream Sauce:
- In the same skillet over medium heat, add the red wine, scraping the bottom to deglaze and collect any caramelized bits.
- Simmer until the wine is reduced by half, about 5 minutes.
- Stir in the heavy cream and the remaining 2 tablespoons of butter.
- Cook for an additional 3-4 minutes until the sauce thickens.

8. Serve:
- Slice the steaks against the grain.
- Serve hot with the red wine cream sauce drizzled over the top.
- Garnish with chopped fresh herbs for added freshness.
