Oven-Baked Herb-Glazed Chicken & Vegetables
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
For the Vegetables:
- 3 cups baby potatoes, halved
- 2 cups baby carrots
- 1 red bell pepper, sliced
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
2. Prepare the Herb Glaze
In a small bowl, combine 1/4 cup olive oil, 3 tablespoons honey, 1 tablespoon Dijon mustard, minced garlic, chopped rosemary, and thyme. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Mix well to create the glaze.
3. Marinate the Chicken
Place the chicken breasts in a shallow dish. Pour half of the herb glaze over the chicken, reserving the other half for later. Ensure the chicken is evenly coated. Cover and marinate in the refrigerator for at least 15 minutes, or longer if time permits.
4. Prepare the Vegetables
In a large mixing bowl, combine the halved baby potatoes, baby carrots, sliced red bell pepper, and red onion wedges. Drizzle 2 tablespoons olive oil, sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper, and toss to coat the vegetables evenly.
5. Assemble and Bake
Remove the chicken from the marinade and place it in a large baking dish. Arrange the seasoned vegetables around the chicken. Bake in the preheated oven at 400°F (200°C) for about 25 minutes.
6. Apply the Remaining Glaze
After 25 minutes, remove the baking dish from the oven, and brush the chicken with the reserved glaze. Return to the oven and bake for an additional 15 minutes or until the chicken is cooked through and the vegetables are tender.
7. Rest and Serve
Remove from the oven and let the dish rest for 5 minutes before serving. Plate the chicken with a generous helping of roasted vegetables.
