Oven-Baked Herb & Spice Chicken with Aromatic Basmati Rice
Ingredients
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon turmeric powder
- 6 boneless, skinless chicken thighs
- 1/4 cup fresh parsley, chopped
- 1 cup basmati rice
- 1 yellow onion, finely chopped
- 2 cups boiling water
Instructions
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare Chicken Marinade:
In a large bowl, combine olive oil, minced garlic, paprika, dried oregano, dried thyme, salt, ground black pepper, and turmeric powder. Mix well to form a marinade.
3. Marinate Chicken:
Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.
4. Prepare Rice Base:
In a large oven-safe skillet or baking dish, heat a little olive oil over medium heat, then add chopped onion. Sauté until translucent, about 5 minutes. Add basmati rice and stir to coat the rice grains with the oil and onion mixture.
5. Transfer to Oven:
Add boiling water to the rice mixture, stirring briefly, then arrange the marinated chicken thighs on top of the rice, skin-side up if applicable. Cover the dish tightly with aluminum foil.
6. Bake:
Place the covered dish in the preheated oven and bake for 40 minutes.
7. Finish Baking:
Remove the foil carefully and continue baking for an additional 10 minutes to allow the chicken to develop a slight crisp on the outside.
8. Garnish and Serve:
Remove the dish from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.
