Oven-Baked Honey Vanilla Breakfast Pancakes with Fresh Strawberries
Ingredients
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder

- 2 large eggs
- 3 tablespoons honey

- ¾ cup cottage cheese
- ¼ cup vegetable oil

- 1 cup fresh strawberries, sliced

Instructions
1. Preheat Oven: Set your oven to 375°F.
2. Prepare Dry Ingredients: In a large mixing bowl, combine 1 ½ cups of all-purpose flour, 2 teaspoons of baking powder, and ½ teaspoon of salt. Whisk these dry ingredients until well blended.
3. Mix Wet Ingredients: In a separate bowl, beat 2 large eggs until frothy. Add 3 tablespoons of honey and 1 teaspoon of vanilla extract. Gradually stir in ¾ cup of cottage cheese, ¼ cup of vegetable oil, and 1 cup of buttermilk. Mix until all wet ingredients are thoroughly combined.
4. Combine Mixtures: Gently fold the wet ingredients into the dry ingredients, mixing until just combined. It's okay if there are a few small lumps.
5. Prepare Baking Dish: Lightly grease a 9x13-inch baking dish with butter or non-stick spray.
6. Assemble: Pour the pancake batter into the prepared dish, spreading evenly. Arrange 1 cup of fresh, sliced strawberries on top of the batter.
7. Bake: Place the dish in the preheated oven. Bake for approximately 20 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
8. Finish: Remove the baking dish from oven and brush with 2 tablespoons of melted butter for extra richness.
