Oven-Baked Hot Honey Glazed Salmon with Carrots and Broccoli



Ingredients



- 4 (6-ounce) Berryhill Hot Honey Salmon fillets
- 1 pound Season’s Choice Hot Honey Carrots
- 1 pound broccoli florets
- 4 chicken thighs, skin on
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- Lemon slices for garnish (optional)

Instructions



1. Preheat the Oven
Preheat your oven to 400°F (200°C).

2. Prepare the Vegetables
In a large mixing bowl, combine the hot honey carrots and broccoli florets. Drizzle with 1 tablespoon of olive oil, and season with garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss to evenly coat.

3. Prepare the Chicken
Pat the chicken thighs dry with paper towels. Drizzle with the remaining olive oil, and season with salt and smoked paprika. Optional: For extra crispy skin, allow the chicken to sit uncovered in the fridge for at least an hour before cooking.

4. Assemble the Dish
On a large baking sheet, arrange the seasoned chicken thighs skin-side up and the prepared vegetables in a single layer. Leave some space for adding the salmon fillets later.

5. Bake the Chicken and Vegetables
Place the baking sheet in the preheated oven and bake for 20 minutes.

6. Add Salmon to the Baking Sheet
Remove the baking sheet, making space for the salmon fillets. Arrange the salmon fillets on the baking sheet, and brush the tops with an additional glaze of the hot honey sauce, if desired.

7. Finish Baking
Return the baking sheet with all the ingredients to the oven. Bake for an additional 15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the chicken reaches an internal temperature of 165°F (75°C).

8. Serve
Drizzle the baked dish with fresh lemon juice for extra brightness. Optionally, garnish with lemon slices. Serve hot and enjoy your gourmet dinner!
