Oven-Baked Lemon Chicken and Cheese Enchilada Casserole
Ingredients
- 2 lbs chicken breasts
- 1 lemon, juiced
- 2 tablespoons olive oil
- 1 cup aged cheese, shredded
- 1 cup habanero cheese, shredded
- 8 corn tortillas
- 1 1/2 cups enchilada sauce
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup tomato sauce
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup cilantro, chopped
Instructions
1. Preparation: Preheat your oven to 375°F (190°C).
2. Marinate Chicken: In a large bowl, combine lemon juice, olive oil, garlic powder, cumin, oregano, salt, and pepper. Add the chicken breasts and coat well. Let it marinate for at least 20 minutes while preparing other ingredients.
3. Cook Chicken: Place the marinated chicken in a baking dish. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and no longer pink in the center. Remove from the oven and let it cool slightly. Reduce the oven temperature to 350°F (175°C).
4. Shred Chicken: Once slightly cooled, shred the chicken using two forks.
5. Prepare Tortillas: Lightly grease a 9x13-inch baking dish. Pour a thin layer of enchilada sauce at the bottom. Fill each corn tortilla with shredded chicken and a sprinkle of cheddar cheese. Roll them up and place them side by side in the baking dish.
6. Layer and Bake: Pour the remaining enchilada sauce over the rolled tortillas. Spread the tomato sauce on top. Sprinkle aged cheese, habanero cheese, remaining cheddar cheese, and mozzarella cheese evenly over the top.
7. Final Bake: Cover the dish with foil and bake in the preheated oven for another 20 minutes. Remove the foil and bake for additional 10 minutes or until the cheese is bubbly and golden brown.
8. Garnish: Remove from oven and let the casserole cool slightly. Garnish with chopped cilantro before serving.
