Oven-Baked Lemon Herb Salmon with Feta and Broccoli
Ingredients
- 4 salmon fillets (about 6 oz each)
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 3 cloves minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 lemon, thinly sliced
- 1/2 cup crumbled feta cheese
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper or lightly greasing it with olive oil.
2. Prepare the Broccoli:
In a large mixing bowl, toss the broccoli florets with 1 tablespoon of olive oil, 1 clove minced garlic, 1/2 teaspoon thyme, 1/2 teaspoon oregano, 1/4 teaspoon salt, and 1/8 teaspoon ground black pepper. Spread the seasoned broccoli evenly on the prepared baking sheet.
3. Season the Salmon:
Place the salmon fillets onto the baking sheet alongside the broccoli. Drizzle the remaining 1 tablespoon of olive oil over the fillets. Sprinkle the salmon evenly with the rest of the minced garlic, thyme, oregano, salt, and pepper.
4. Add Lemon Slices:
Place lemon slices over each salmon fillet, ensuring every piece is covered.
5. Bake:
Transfer the baking sheet to the preheated oven. Bake for approximately 12-15 minutes or until the salmon flakes easily with a fork and the broccoli is tender yet slightly crisp.
6. Top with Feta:
Remove the baking sheet from the oven. Immediately sprinkle the crumbled feta cheese over the hot salmon and broccoli, allowing it to slightly melt from the residual heat.
7. Serve:
Arrange the salmon and broccoli onto plates, garnish with any extra lemon wedges if desired, and serve warm.
