Oven-Baked Mediterranean Bruschetta Delight
Ingredients
- 4 ripe tomatoes, diced
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 baguette or rustic bread, sliced
- 1 cucumber, finely sliced
- 1 small red onion, thinly sliced
- 8 oz mozzarella cheese, sliced
- 1/2 cup Greek olives, pitted and halved
- 1/4 cup grated Parmesan cheese
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Tomato Basil Mixture:
In a medium bowl, combine the diced tomatoes, chopped basil, olive oil, minced garlic, and balsamic vinegar. Stir well and set aside to allow flavors to meld.
3. Prepare the Bread for Baking:
Lay the bread slices on a baking sheet. Drizzle or brush them lightly with olive oil. Bake in the preheated oven for about PT8M (8 minutes) until they are slightly toasted and golden brown.
4. Prepare Additional Toppings:
While the bread is toasting, combine the cucumber slices, red onion, and Greek olives in a separate bowl. Toss with a small drizzle of olive oil, adding a pinch of salt and pepper to taste.
5. Assemble the Bruschetta:
Once the bread slices are toasted, remove them from the oven. Arrange a slice of mozzarella cheese on each piece of bread, then top with a spoonful of the tomato basil mixture.
6. Bake to Perfection:
Return the assembled bruschetta to the oven for an additional PT7M (7 minutes) or until the mozzarella becomes melty and bubbly.
7. Garnish and Serve:
Remove from the oven and immediately top with the cucumber and olive mixture. Sprinkle a generous amount of grated Parmesan cheese over each bruschetta. Serve warm.
