Oven-Baked Mediterranean Chicken and Pork with Roasted Vegetables
Ingredients

Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Meat:
- Season the chicken breasts and pork tenderloin evenly with olive oil, garlic powder, oregano, salt, and pepper.
- In a large baking dish, place the chicken breasts on one side and the pork tenderloin on the other.
3. Prepare the Vegetables:
- In a large bowl, combine broccoli florets, carrot slices, bell pepper slices, and onion slices.
- Drizzle with olive oil and season with additional salt and pepper to taste.
- Toss the vegetables thoroughly until evenly coated.
4. Assemble and Bake:
- Arrange the seasoned vegetables around the chicken and pork in the baking dish.
- Place the baking dish in the preheated oven.
- Bake for 30 minutes.
5. Add the Cheese:
- Remove the baking dish from the oven.
- Sprinkle shredded mozzarella cheese evenly over the chicken and pork.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and golden brown.
6. Ensure Proper Cooking:
- Check that the chicken and pork have reached an internal temperature of 165°F (74°C) using a meat thermometer.
- Remove from the oven and let rest for 5 minutes before serving.
