Oven-Baked Mozzarella & Ricotta Arugula Pizza with Calabrian Chili Drizzle



Ingredients



- 1 pound low-moisture mozzarella cheese, sliced
- 1 cup ricotta cheese
- 2 cups fresh arugula
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 1 tablespoon fresh basil leaves, chopped
- 2 tablespoons hot honey
- 1 tablespoon Calabrian chili oil
- 1/4 cup grated Parmigiano Reggiano
- 1/4 cup grated Pecorino cheese
- 1 teaspoon oregano
- Salt, to taste
- Pepper, to taste
- 1 teaspoon red chile flakes

Instructions



1. Preheat the Oven:
Set your oven to 475°F (245°C) and place a pizza stone or a heavy-duty baking sheet on the middle rack to heat.

2. Prepare the Dough (if making from scratch):
- If using store-bought dough, skip this step.
- Otherwise, prepare your favorite pizza dough recipe and allow it to rise until doubled in size.

3. Prepare the Toppings:
- In a small bowl, combine 1 cup ricotta cheese with 1 tablespoon of lemon juice, salt, and pepper. Mix until smooth and set aside.
- In another bowl, toss 2 cups of fresh arugula with 1 tablespoon of lemon juice and 1 tablespoon of olive oil. Set aside.

4. Assemble the Pizza:
- Roll out the pizza dough on a lightly floured surface into a 12-inch circle.
- Carefully transfer the dough to a piece of parchment paper.
- Spread the ricotta mixture evenly across the dough, leaving a 1-inch border.
- Arrange mozzarella slices over the ricotta layer.

5. Bake the Pizza:
- Transfer the pizza, with the parchment paper, onto the preheated pizza stone or baking sheet.
- Bake for about 10-12 minutes or until the cheese is bubbling and the crust is golden brown.

6. Add Finishing Touches:
- Remove the pizza from the oven and top with the arugula mixture.
- Drizzle with hot honey and Calabrian chili oil.
- Sprinkle with grated Parmigiano Reggiano, Pecorino cheese, red chile flakes, chopped basil, and a dash of oregano.

7. Serve and Enjoy:
- Let the pizza cool slightly, slice into wedges, and serve while warm.
