Oven-Baked Mustard-Glazed Pork Tenderloin
Ingredients
- 1 ½ pounds pork tenderloin
- 2 tablespoons olive oil
- ¼ cup brown sugar
- 3 tablespoons lemon juice
- 2 tablespoons white wine vinegar
- 4 tablespoons whole grain mustard
- Salt and pepper to taste
Instructions
1. Preheat the Oven:
Begin by preheating your oven to 375°F (190°C).
2. Prepare the Glaze:
In a medium bowl, combine the brown sugar, lemon juice, white wine vinegar, and whole grain mustard. Whisk together until the mixture is smooth and uniform.
3. Season the Pork:
Season the pork tenderloin generously with salt and pepper, ensuring even coverage over the entire surface.
4. Sear the Pork:
In a large oven-proof skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the pork tenderloin. Sear each side for about 2-3 minutes until the tenderloin is evenly browned.
5. Apply the Glaze:
Once seared, remove the skillet from heat. Pour the mustard glaze evenly over the pork tenderloin, making sure it is well-coated.
6. Bake the Pork:
Transfer the skillet to the preheated oven. Roast the pork for approximately 20-25 minutes or until the internal temperature reaches 145°F (63°C).
7. Rest the Pork:
Once cooked, remove the pork from the oven. Allow it to rest for 5 minutes before slicing. Resting helps the juices redistribute and ensures a moist tenderloin.
8. Serve:
Slice the pork tenderloin into medallions and arrange on a serving platter. Drizzle any additional glaze from the skillet over the sliced pork before serving.
