Oven-Baked Mustard-Glazed Pork Tenderloin



Ingredients



- 1 cup apple juice
- 1/4 cup brown sugar
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 tablespoons whole-grain mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper
- 1/2 teaspoon ground allspice
- 2 pounds pork tenderloin

Instructions



1. Preheat Oven
Begin by preheating your oven to 375°F.

2. Prepare the Marinade
In a medium saucepan, combine the apple juice, brown sugar, honey, Dijon mustard, whole-grain mustard, apple cider vinegar, Worcestershire sauce, black pepper, and ground allspice. Mix well to incorporate all the ingredients.

3. Simmer the Marinade
Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally, until the sugar dissolves completely. This should take about PT5M (5 minutes).

4. Marinate the Pork Tenderloin
Place the pork tenderloin in a large resealable bag or shallow dish. Pour the warm marinade over the pork, ensuring it's evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for PT30M (30 minutes) to let the flavors infuse.

5. Bake the Pork
Remove the pork from the marinade, reserving the marinade for later use. Place the pork tenderloin on a roasting pan lined with aluminum foil. Transfer to the preheated oven and bake for PT25M (25 minutes), or until the pork reaches an internal temperature of 145°F.

6. Thicken the Marinade
While the pork is baking, pour the reserved marinade back into the saucepan. Bring it to a boil over medium-high heat and then reduce the heat to simmer, allowing it to thicken for about PT10M (10 minutes). Stir occasionally.

7. Glaze the Pork and Rest
Once the pork is done, remove it from the oven. Use a brush to generously coat the tenderloin with the thickened glaze. Let the pork rest for PT10M (10 minutes) before slicing it into medallions.

8. Serve
