Oven-Baked Parmesan Potato Crisps
Ingredients
- 4 medium-sized potatoes (about 2 pounds)
- 1 teaspoon baking soda
- 3 tablespoons unsalted butter, melted
- 1 cup grated Parmesan cheese
- Salt, to taste
- Freshly cracked black pepper, to taste
- Optional: Fresh parsley, chopped, for garnish
Instructions
1. Preheat the Oven:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.
2. Prepare the Potatoes:
- Wash and peel the potatoes. Thinly slice them into rounds about 1/8 inch thick using a sharp knife or mandoline slicer for consistent slices.
3. Parboil the Potatoes:
- Fill a large saucepan with water. Add 1 teaspoon of salt and the baking soda. Bring to a boil over high heat.
- Add the potato slices and boil for about 2 minutes. The baking soda helps to break down the surface of the potato, making them extra crispy.
- Drain the potatoes and let them sit for a minute to release steam.
4. Coat with Butter and Cheese:
- In a large bowl, combine the melted butter and half of the grated Parmesan cheese.
- Gently toss the parboiled potatoes in the butter and cheese mixture until they are evenly coated.
5. Arrange and Season:
- Spread the potato slices in a single layer on the prepared baking sheet.
- Sprinkle the remaining Parmesan cheese, salt, and freshly cracked black pepper over the potatoes for added flavor.
6. Bake to Perfection:
- Place the baking sheet in the preheated oven and bake for about 20-25 minutes. Keep an eye on them to ensure they don't burn, as ovens can vary. The crisps are done when they are golden brown and crispy.
7. Serve:
- Once baked, remove the crisps from the oven and let them cool slightly. Optionally, garnish with freshly chopped parsley for a pop of color and added freshness.
