Oven-Baked Passion Fruit & Raspberry Granola Clusters
Ingredients
- 2 cups rolled oat clusters
- 2 passion fruits
- 1 cup freeze-dried raspberries
- 2 tablespoons honey
- 1/4 cup light brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
Instructions
1. Preheat the Oven:
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper to prevent sticking.
2. Prepare the Passion Fruit:
Cut the passion fruits in half and scoop out the pulp using a spoon. Discard the shells.
3. Mix Wet Ingredients:
In a large mixing bowl, combine the passion fruit pulp, honey, melted butter, and vanilla extract. Stir until well mixed.
4. Combine Dry Ingredients:
In another bowl, mix together the rolled oat clusters, freeze-dried raspberries, light brown sugar, and salt.
5. Combine Wet and Dry Mixtures:
Gradually incorporate the dry ingredients into the wet mixture while stirring continuously to ensure even coating.
6. Spread on Baking Sheet:
Evenly spread the mixture onto the prepared baking sheet, pressing down lightly to form a compact layer.
7. Bake the Granola Clusters:
Bake in the preheated oven for 20 minutes. Stir the mixture gently halfway through to ensure even baking, then continue baking for an additional 10 to 15 minutes, or until golden brown.
8. Cool and Break into Clusters:
Remove the baking sheet from the oven and allow the mixture to cool completely on the sheet. Once cooled, break the granola into bite-sized clusters using your hands.
