Oven-Baked Peach and Blueberry Crisp
Ingredients
- 4 ripe peaches, sliced
- 1 cup fresh blueberries
- 1 cup all-purpose flour
- 3/4 cup rolled oats
- 1 cup light brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 teaspoon vanilla extract
- Lemon juice from 1/2 lemon
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Fruit Base:
- In a large mixing bowl, combine the sliced peaches with fresh blueberries.
- Add the vanilla extract and drizzle with lemon juice. Toss gently to coat the fruit evenly.
3. Assemble the Crisp:
- In another bowl, mix the flour, oats, brown sugar, ground cinnamon, and salt.
- Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
4. Layer the Dish:
- Spread the fruit mixture evenly in a 9x13-inch baking dish.
- Sprinkle the crisp topping over the fruit, ensuring it's distributed evenly.
5. Bake:
- Place the baking dish in the preheated oven.
- Bake for 40 minutes, or until the topping is golden brown and the fruit is bubbly.
6. Cool and Serve:
- Allow the crisp to cool for at least 10 minutes before serving. This will help the fruit set.
- Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
