Oven-Baked Peach & Walnut Chicken with Herbed Feta Zucchini Ribbons
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 ripe peaches, thinly sliced
- 1/2 cup walnuts, coarsely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
For the Zucchini Ribbons:
- 2 medium zucchinis, sliced into ribbons with a peeler
- 1/2 cup crumbled feta cheese
- 2 tablespoons pine nuts, toasted
- 1 tablespoon fresh basil leaves, chopped
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper

Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Chicken:
- Season the chicken breasts with salt and black pepper on both sides.
- In a mixing bowl, combine the sliced peaches, chopped walnuts, olive oil, and lemon juice.
- Place the chicken breasts in a large baking dish and top each with an even layer of the peach and walnut mixture.
3. Bake the Chicken:
- Cover the baking dish with aluminum foil and place in the preheated oven.
- Bake for approximately 25 minutes covered, then uncover and bake for an additional 10 minutes, or until the chicken is cooked through and the juices run clear.
4. Prepare the Zucchini Ribbons:
- While the chicken is baking, heat olive oil in a saucepan over medium heat.
- Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the zucchini ribbons, salt, and pepper, and cook for about 3 minutes until the zucchini is tender but still crisp.
- Remove from heat and stir in the chopped basil.
5. Assemble the Dish:
- Mix the sautéed zucchini ribbons with crumbled feta cheese and toasted pine nuts.
- Serve the chicken alongside the zucchini ribbons and garnish with fresh basil leaves if desired.
