Oven-Baked Pork and Bacon Bean Casserole
Ingredients
- 3 lbs pork roast
- 6 slices bacon, chopped
- 1 cup canned baked beans
- 1 cup navy beans, cooked and drained
- 1 large onion, diced
- 4 cloves garlic, minced
- 1/2 cup ketchup
- 1/4 cup molasses
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon mustard powder
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat Oven: Preheat your oven to 350°F (175°C).
2. Prepare Pork Roast: Season the pork roast with salt and pepper on all sides. Set aside.
3. Cook Bacon: In a large, oven-safe pot or Dutch oven, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
4. Sauté Vegetables: In the same pot, add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional 1 minute until fragrant.
5. Combine Ingredients: Return the cooked bacon and add the pork roast to the pot. Stir in the baked beans, navy beans, ketchup, molasses, brown sugar, apple cider vinegar, Worcestershire sauce, mustard powder, and chicken broth.
6. Mix and Cook: Stir all ingredients well to combine, ensuring the pork roast is nestled in the center of the pot.
7. Bake: Cover the pot with a lid or aluminum foil and transfer to the preheated oven. Bake for 2 hours until the pork is tender and the flavors have melded together.
8. Finishing Touches: Remove the lid or foil for the last 10 minutes of baking to allow the top to caramelize slightly.
9. Rest and Serve: Once cooked, let the dish cool for 10 minutes before slicing the pork roast and serving with the bean mixture for a complete meal.
