Oven-Baked Poultry and Beef Medley with Rice and Vegetables
Ingredients

- 2 chicken breasts (about 1 pound total)
- 1/2 pound ground turkey
- 1/2 pound ground beef
Rice and Vegetables
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth
- 1 cup broccoli florets
- 1 cup diced carrots
- 1 cup chopped bell peppers
- 1 medium onion, chopped
Seasonings and Others
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Instructions
1. Prepare the Oven and Baking Dish
Preheat your oven to 375°F (190°C), ensuring it reaches the desired temperature before baking. Grease a large baking dish with olive oil, spreading it evenly to prevent sticking.
2. Cook the Meat Mixture
In a medium skillet over medium heat, add 1 tablespoon of olive oil. Once heated, cook the ground turkey and ground beef together, breaking it into crumbles, until browned for about 8-10 minutes. Season with salt, pepper, and 1/2 tablespoon of garlic powder. Remove from heat and set aside.
3. Prepare the Rice and Vegetables
In the same skillet, add the chopped onion, broccoli, carrots, and bell peppers. Let them sauté in the remaining olive oil until they are soft, about 5 minutes. Stir in the rice and coat it with the vegetable mixture.
4. Assemble the Baking Dish
Layer the vegetable and rice mixture evenly on the bottom of the baking dish. Pour the chicken broth over the rice and vegetables ensuring even distribution. Place the chicken breasts on top and season with salt, pepper, paprika, thyme, oregano, and the remaining garlic powder.
5. Bake the Dish
Cover the baking dish tightly with aluminum foil. Place in the preheated oven and bake for about 40 minutes. After this, remove the foil and continue to bake for an additional 10 minutes, or until the rice has absorbed the liquid and the chicken is cooked through.
6. Combine and Serve
Once done, remove from the oven and let it sit for 5 minutes. Slice the chicken breasts and return them to the dish, mixing lightly with the ground meat and rice. Serve warm.
