Oven-Baked Pumpkin and Apple Phyllo Parcels



Ingredients



- 2 large eggs
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup apple cider
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1 cup pureed pumpkin
- 1 cup butternut squash, cubed and cooked
- 1/2 cup walnuts, chopped
- 1/2 cup cheese, shredded (use a mild cheddar or gouda)
- 1 tablespoon mixed fresh herbs (e.g., thyme, parsley)
- 4 slices bacon, cooked and crumbled
- 1 pack phyllo dough (approximately 12 sheets)
- 2 medium apples, peeled, cored, and finely diced

Instructions



1. Preheat the Oven
Preheat your oven to 375°F (190°C).

2. Prepare the Filling
In a large mixing bowl, combine the eggs, flour, granulated sugar, apple cider, and baking powder. Whisk together until smooth.

3. Mix in Pumpkin and Squash
Add the pureed pumpkin and cooked butternut squash to the batter. Mix until all ingredients are well incorporated.

4. Add Additional Ingredients
Stir in melted butter, brown sugar, cinnamon, chopped walnuts, shredded cheese, mixed herbs, crumbled bacon, and diced apples. Ensure everything is evenly distributed.

5. Prepare the Phyllo Dough
Unroll the phyllo dough carefully. Work with one sheet at a time, keeping the rest covered with a damp towel to prevent drying.

6. Assemble the Parcels
Lay one phyllo sheet flat and brush it with a small amount of melted butter. Place another sheet on top and brush with butter again. Spoon a generous amount of the filling mixture onto the bottom center of the phyllo. Fold in the sides and roll up into a parcel. Repeat with remaining sheets and filling, placing finished parcels on a parchment-lined baking sheet.

7. Bake
Bake in the preheated oven for 25-30 minutes, or until the parcels are golden brown and crispy.

8. Cool and Serve
Allow the parcels to cool slightly before serving. Perfect as a warm, comforting snack.
