Oven-Baked Ranch Potato Bites with Creamy Onion Dip
Ingredients
- 4 medium potatoes, peeled and diced into 1-inch cubes
- 1 cup sour cream
- 1 medium onion, finely chopped
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 packet (1 oz) ranch seasoning mix
Instructions
1. Preheat the Oven:
Set your oven to 425°F (220°C) to preheat while you prepare the potatoes.
2. Prepare the Potatoes:
In a large mixing bowl, combine the diced potatoes, 1 tablespoon of vegetable oil, and the entire packet of ranch seasoning. Toss the potatoes until they are evenly coated with oil and seasoning.
3. Bake the Potatoes:
Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy on the outside. Flip the potatoes halfway through the baking time to ensure even cooking.
4. Prepare the Creamy Onion Dip:
While the potatoes are baking, heat the remaining 1 tablespoon of vegetable oil in a small skillet over medium heat. Add the chopped onion and a pinch of salt. Sauté the onion until it becomes soft and translucent, about 5-7 minutes.
