Oven-Baked Risotto Arancini with Marinara Sauce



Ingredients



- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1 cup Arborio rice
- 1/4 cup white wine
- 2 cups vegetable broth
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup peas
- Salt to taste
- Pepper to taste
- 4 ounces mozzarella cheese, cut into small cubes
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1 cup marinara sauce

Instructions



1. Prepare the Risotto:
- In a large saucepan, heat the olive oil over medium heat.
- Add the chopped onion and cook, stirring occasionally, until translucent, about 4 minutes.
- Stir in the Arborio rice, ensuring each grain is coated in oil, and cook for an additional 2 minutes.
- Pour in the white wine and simmer until absorbed by the rice.

2. Cook the Risotto:
- Gradually add the vegetable broth and chicken broth, one ladle at a time, allowing each to be absorbed before adding the next.
- Stir frequently until the rice is creamy and tender, about 18–20 minutes.
- Stir in the Parmesan cheese, peas, and season with salt and pepper to taste.
- Let the risotto cool to room temperature.

3. Assemble the Arancini:
- Preheat the oven to 375°F (190°C).
- Shape cooled risotto into 2-inch balls, pressing a cube of mozzarella cheese into the center of each ball.
- Roll each ball in all-purpose flour, dip in beaten eggs, then coat with panko breadcrumbs.

4. Bake the Arancini:
- Place the arancini on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25 minutes or until golden brown and crispy.

5. Serve:
- Warm the marinara sauce over low heat and serve it alongside the baked arancini for dipping.
