Oven-Baked Salmon & Parmesan Chips with Chocolate Caramel Drizzle



Ingredients



- 4 salmon fillets
- 4 oz Parmesan cheese, grated
- 1 cup potato chips, crushed
- 1/2 cup butter, melted
- 1 lemon, cut into wedges
- 1/2 teaspoon mixed spices (e.g., paprika, black pepper, garlic powder)
- 2 oz dark chocolate, melted
- 1 oz freeze-dried strawberries, crushed
- 2 tablespoons caramel sauce
- 1/4 cup sparkling rosé

Instructions



1. Preheat the Oven
Preheat your oven to 400°F (204°C).

2. Prepare the Salmon
Pat the salmon fillets dry with a paper towel. Arrange them skin-side down on a baking sheet lined with parchment paper. Squeeze lemon wedges over the salmon.

3. Create the Parmesan Crust
In a mixing bowl, combine grated Parmesan cheese and crushed potato chips. Add melted butter and mixed spices, stirring until the mixture resembles wet sand.

4. Coat the Salmon
Press the Parmesan mixture onto the top of each salmon fillet, ensuring an even coating.

5. Bake the Salmon
Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, or until the salmon is cooked through and the crust is golden brown.

6. Prepare the Chocolate Caramel Drizzle
In a small saucepan, combine the melted dark chocolate, caramel sauce, and sparkling rosé. Heat over low heat, stirring continuously until smooth and glossy.

7. Garnish with Strawberries
Sprinkle the crushed freeze-dried strawberries over the chocolate caramel drizzle.

8. Serve
Once the salmon is cooked, remove from the oven and let it rest for 5 minutes. Drizzle the chocolate caramel sauce over the top and garnish the plate with additional lemon wedges.
