Oven-Baked Turkey and Cranberry Stuffing with Butternut Squash and Bacon

Ingredients

- 1-pound turkey breast
- 2 cups turkey gravy
- 4 cups cubed cornbread
- 1 cup chopped apples
- 1 cup cranberries
- 1/2 cup chopped pecans
- 1 tablespoon fresh thyme leaves
- 1 teaspoon ground nutmeg
- 6 slices bacon, cooked and crumbled
- 1 pound Brussels sprouts, halved
- 1 tablespoon olive oil
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 2 cups cooked yams, mashed
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 3 tablespoons syrup maple
- 1/4 cup melted butter
- 2 eggs, beaten

Instructions

1. Preheat the Oven
Preheat your oven to 350°F (175°C).

2. Prepare the Stuffing
In a large mixing bowl, combine the cubed cornbread, chopped apples, cranberries, pecans, thyme, and nutmeg. Mix well.

3. Incorporate Turkey Gravy
Pour the turkey gravy onto the cornbread mixture, stirring until everything is well-coated.

4. Add Bacon
Fold in the crumbled bacon and ensure an even distribution throughout the stuffing mixture.

5. Roast the Brussels Sprouts
On a baking sheet, toss the halved Brussels sprouts with olive oil, 1/2 teaspoon salt, and pepper. Roast in the oven for 20 minutes until golden brown.

6. Prepare the Yams
In a separate bowl, combine mashed yams with cinnamon, cloves, maple syrup, melted butter, and beaten eggs. Mix until smooth.

7. Assemble the Dish
Layer the stuffing evenly into a greased 9x13-inch baking dish. Top with roasted Brussels sprouts and spread the yam mixture over the top.

8. Bake the Dish
Place the dish in the oven and bake for approximately 35 minutes or until the top is golden and crispy.

9. Cook Turkey
Season the turkey breast with the remaining salt and any other spices of your choice. Bake alongside the stuffing for 35-40 minutes or until the internal temperature reaches 165°F (75°C).

10. Let it Rest
Allow the turkey to rest for 5-10 minutes after baking before slicing.

11. Serve
Slice the turkey and serve alongside the cranberry stuffing with a side of roasted Brussels sprouts and yam topping.
