Oven-Baked Vegetable & Orzo Medley with Parmesan and Smoked Ham
Ingredients
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 cup smoked ham, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup butternut squash, diced
- 1 cup zucchini, sliced
- 1 cup mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1/2 cup peas
- 1/2 cup corn
- 1/4 cup pecans, chopped
- 1/4 cup walnuts, chopped
- 1/2 teaspoon rosemary, chopped
- 1/2 teaspoon thyme, chopped
- 1/2 teaspoon ground cinnamon
- 1/2 cup Greek yogurt
- 1 cup Parmesan cheese, grated
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
1. Preheat the Oven: Set your oven to 375°F (190°C).
2. Prepare the Orzo: In a large pot, bring water to a boil. Add 1 cup of orzo and cook for about 8 minutes, or until al dente. Drain and set aside.
3. Sauté Vegetables: In a large skillet over medium heat, add 2 tablespoons of olive oil. Sauté the garlic and chopped onion until translucent, about 2-3 minutes.
4. Add More Vegetables: Stir in the broccoli, cauliflower, carrots, zucchini, mushrooms, and butternut squash. Add rosemary, thyme, and cinnamon. Cook for another 5 minutes, stirring occasionally.
5. Combine Ingredients: In a large mixing bowl, combine the cooked orzo, sautéed vegetables, smoked ham, peas, corn, spinach, pecans, walnuts, and Greek yogurt. Season with salt and pepper to taste.
6. Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish. Spread evenly.
7. Add Toppings: Sprinkle the Parmesan cheese evenly over the top.
8. Bake: Place the dish in the preheated oven and bake for 20 minutes, or until the cheese is golden and bubbly.
9. Serve: Allow to cool slightly, then serve warm.
