Oven-Baked Whole Wheat Breakfast Delight with Tropical Fruits and Nuts



Ingredients



- Main Ingredients
- 1 cup whole wheat flour
- 1/3 cup wheat bran
- 1/2 cup rolled oats
- 1 cup raisins
- 2 ripe bananas, mashed
- 1 ripe avocado, mashed
- 3 large eggs
- 1/2 cup applesauce
- 1/4 cup butter, melted
- 1/4 cup olive oil

- Additional Ingredients
- 1/2 teaspoon salt
- 1/2 cup granola
- 1/2 cup almonds, chopped
- 1/2 cup peanut butter

- For Serving
- Portobello mushrooms, sliced
- Hummus
- Fresh strawberries, sliced

Instructions



1. Preheat the Oven
Preheat your oven to 350°F (175°C).

2. Prepare the Wet Ingredients
In a large mixing bowl, combine the mashed bananas, mashed avocado, eggs, applesauce, melted butter, and olive oil. Whisk the ingredients until well blended.

3. Mix the Dry Ingredients
In another bowl, combine the whole wheat flour, wheat bran, rolled oats, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.

4. Incorporate Raisins and Nuts
Gently fold in the raisins and chopped almonds into the batter until evenly distributed.

5. Prepare the Baking Pan
Grease a 9x13-inch baking pan lightly with olive oil.

6. Pour the Batter and Top with Granola
Pour the batter into the prepared pan, spreading it evenly. Sprinkle the granola over the top.

7. Bake the Breakfast Delight
Place the pan in the preheated oven and bake for about 35 minutes, or until a toothpick inserted in the center comes out clean.

8. Toast Portobello Slices and Prepare Sides (Optional)
Meanwhile, in a skillet, dry-toast the portobello mushrooms over medium heat until slightly caramelized and tender, about 5 minutes.

9. Serve
Allow the baked breakfast to cool slightly. Cut into squares and serve warm, paired with a dollop of hummus, toasty portobello slices, and fresh strawberries on the side.
