Oven-Baked Yukon Gold and Horseradish Mashed Potatoes
Ingredients
- 4 large Yukon Gold potatoes, peeled and quartered
- 4 tablespoons unsalted butter, softened
- 1 cup whole milk
- 2 tablespoons prepared horseradish
- 1/4 cup Parmesan cheese, grated
- 1/4 cup whipped cream, lightly whipped
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Boil the Potatoes:
- In a large pot, place the quartered Yukon Gold potatoes and cover them with cold water.
- Add a pinch of salt to the water.
- Bring the water to a boil over medium-high heat, then reduce to a simmer.
- Cook the potatoes for approximately 20 minutes or until they are fork-tender.
3. Drain and Mash:
- Drain the potatoes well and transfer them back into the pot or a large bowl.
- Using a potato masher, mash the potatoes until smooth and free of lumps.
4. Mix in the Ingredients:
- Add the softened butter and mix until fully incorporated.
- Gradually add the whole milk, continuing to mash and mix until the potatoes are creamy.
- Stir in the prepared horseradish and grated Parmesan cheese.
- Gently fold in the whipped cream to add lightness to the mashed potatoes.
- Season with salt and black pepper to taste.
5. Transfer and Bake:
- Spoon the mashed potato mixture into an oven-safe baking dish, spreading it evenly.
- Sprinkle paprika over the top for color and a hint of spice.
- Place the dish in the preheated oven and bake for about 15 minutes, or until the top is lightly golden.
6. Serve:
- Remove from the oven and let it cool slightly before serving.
