Oven-Baked Zucchini Feta Bites
Ingredients
- 2 medium zucchini, grated
- 1 cup crumbled feta cheese
- 1 large egg
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup all-purpose flour
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
1. Preheat the oven:
Preheat your oven to 350°F (175°C).
2. Prepare zucchini:
Grate the zucchini using a box grater. Place grated zucchini in a clean kitchen towel, and squeeze out as much moisture as possible. This prevents the bites from becoming soggy.
3. Mix the ingredients:
In a large mixing bowl, combine the grated zucchini, crumbled feta cheese, egg, chopped dill, mint, green onions, and minced garlic. Mix well to combine.
4. Add dry ingredients:
Add breadcrumbs, flour, and black pepper to the zucchini mixture. Mix until everything is well incorporated and holds together.
5. Shape the bites:
Form the mixture into small balls or patties, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
6. Brush with olive oil:
Using a pastry brush, lightly brush the top of each zucchini bite with olive oil. This will help them brown nicely.
7. Bake:
Place the baking sheet in the preheated oven and bake for 25 minutes until the bites are golden brown and firm to the touch.
8. Cool and serve:
Remove from the oven and let them cool slightly. Serve warm as a delicious snack or appetizer.
