Oven-Braised Beef with Noodles and Herbs
Ingredients
- 2 pounds beef chuck roast, cut into 2-inch pieces
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 1 large onion, finely chopped
- 3 cups beef broth
- 2 stalks celery, chopped
- 1 beef bouillon cube
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 tablespoons cornstarch
- 1/4 cup cold water
- 12 ounces egg noodles
- 1/4 cup fresh parsley, chopped
Instructions
1. Preheat Oven: Preheat your oven to 325°F (163°C).
2. Season Beef: In a large bowl, season the beef pieces with garlic powder, salt, and black pepper. Toss to coat evenly.
3. Sear Beef: In a large oven-safe pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef pieces in batches, searing each side until browned (approximately 5 minutes per batch). Remove the beef and set aside.
4. Sauté Onion: Lower the heat to medium and add the butter to the same pot. Once melted, add the chopped onion and sauté until translucent, approximately 5 minutes.
5. Deglaze and Simmer: Pour in the beef broth and scrape up any browned bits from the bottom of the pot. Add the seared beef back into the pot along with the celery, beef bouillon cube, thyme, and bay leaves. Stir well.
6. Braise in the Oven: Cover the pot with a tight-fitting lid and transfer it to the preheated oven. Allow it to braise for about 2 hours or until the beef is fork-tender.
7. Thicken Sauce: After braising, remove the pot from the oven. In a small bowl, mix the cornstarch and cold water until smooth. Stir this mixture into the pot and simmer on the stove over medium heat until the sauce thickens, around 5-7 minutes.
8. Cook Noodles: While the sauce is thickening, cook the egg noodles according to package instructions. Drain and set aside.
9. Combine and Serve: Add the cooked noodles to the pot with the thickened beef mixture. Gently combine them. Garnish with fresh parsley before serving.
