Oven-Braised Gigondas Beef Roast
Ingredients
- 1 (3-pound) beef chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large yellow onion, sliced
- 4 cloves garlic, minced
- 2 cups Kirkland Signature Gigondas wine
- 1 cup beef broth
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
- 4 large carrots, peeled and cut into chunks
- 12 small red potatoes, halved
- 2 tablespoons tomato paste
Instructions
1. Preheat Oven: Preheat your oven to 325°F (163°C).
2. Prepare the Roast:
- Pat the beef chuck roast dry with paper towels and season all sides with salt and pepper.
3. Sear the Roast:
- In a large Dutch oven or heavy oven-safe pot, heat olive oil over medium-high heat.
- Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.
4. Cook Onions and Garlic:
- In the same pot, add the sliced onions and sauté until translucent, around 5 minutes.
- Stir in the minced garlic and cook for another 1 minute.
5. Deglaze with Wine:
- Pour in the Kirkland Signature Gigondas wine, using a wooden spoon to scrape up any browned bits from the pot’s bottom.
6. Combine Ingredients:
- Return the seared beef to the pot.
- Add beef broth, fresh thyme, rosemary, bay leaves, carrots, and potatoes around the roast.
- Stir in the tomato paste until well combined.
7. Braise the Roast:
- Cover the pot with a lid and place it in the preheated oven.
- Braise for approximately 3 hours, or until the beef is tender and easily shreds with a fork.
8. Rest and Serve:
- Remove the pot from the oven and let the roast rest for 10 minutes.
- Remove thyme, rosemary, and bay leaves before serving.
- Slice and serve the beef with the vegetables, drizzled with the braising liquid.
