Oven-Braised Lamb with Root Vegetables and Cheesy Mashed Potato Topping



Ingredients



For the Lamb and Vegetables:
- 2 pounds lamb shoulder, cubed
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 medium onions, sliced
- 3 carrots, peeled and sliced
- 3 parsnips, peeled and sliced
- 1 cup stout
- 1 cup beef broth
- Salt and pepper to taste

For the Cheesy Mashed Potatoes:
- 2 pounds potatoes, peeled and quartered
- 1/2 cup whole milk
- 4 tablespoons unsalted butter
- 1 cup shredded cheddar cheese
- Salt and pepper to taste

Instructions



1. Prepare the Cheesy Mashed Potatoes:
- Cook the potatoes in a large pot of boiling salted water until tender, about 15 minutes.
- Drain and return the potatoes to the pot. Add milk and butter, and mash until smooth.
- Stir in cheddar cheese and season with salt and pepper. Set aside.

2. Preheat the Oven:
- Preheat your oven to 350°F (175°C).

3. Brown the Lamb:
- In a large oven-safe dutch oven, heat olive oil over medium-high heat.
- Toss lamb pieces with flour, salt, and pepper. Add to the pot and brown on all sides, about 5 minutes.
- Remove lamb and set aside.

4. Sauté the Vegetables:
- In the same pot, add the onions and sauté until translucent, about 5 minutes.
- Add the carrots and parsnips, and cook for another 5 minutes.

5. Combine and Braise:
- Return the lamb to the pot, pour in the stout and beef broth. Stir to combine.
- Bring the mixture to a gentle simmer.

6. Bake:
- Cover the pot and transfer to the oven.
- Braise for 2 hours, or until the lamb is tender and the flavors have melded.

7. Top with Mashed Potatoes:
- Spread the prepared cheesy mashed potatoes over the lamb and vegetable mixture.
- Return the pot to the oven, uncovered, and bake for another 30 minutes.
