Oven-Roasted Asian-Style Pork Ribs with Spicy Peanut Glaze



Ingredients



- 2 racks pork ribs (about 4 pounds)
- 1/4 cup hoisin sauce
- 2 tablespoons light tamari or light soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon molasses
- 1 tablespoon peanut butter
- 1 tablespoon gochujang
- 2 tablespoons rice wine vinegar
- 2 teaspoons toasted sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 teaspoons Chinese Five Spice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup peanuts, chopped
- 1 Fresno chili pepper, sliced
- 2 green onions, chopped
- 1/4 cup fresh cilantro, chopped

Instructions



1. Preheat the Oven: Set your oven to 300°F (150°C).

2. Prepare the Ribs: Rinse the pork ribs under cold water and pat them dry with a paper towel. Place the ribs on a large baking sheet lined with aluminum foil.

3. Seasoning Rub: In a small bowl, mix Chinese Five Spice, salt, and pepper. Rub this mixture evenly over both sides of the ribs.

4. Cover and Roast: Cover the baking sheet tightly with another sheet of foil to trap steam. Place in the preheated oven and roast for 2 hours (PT2H).

5. Make the Glaze:
- In a medium saucepan over medium heat, combine hoisin sauce, light tamari or soy sauce, maple syrup, molasses, peanut butter, gochujang, rice wine vinegar, toasted sesame oil, garlic, and ginger.
- Stir until the mixture is smooth and begins to simmer.
- In a small bowl, mix cornstarch with 2 tablespoons of water until dissolved. Add this slurry to the saucepan and stir continuously until the glaze thickens.

6. Glaze the Ribs: After 2 hours, remove the foil cover from the ribs and brush them generously with the prepared glaze. Increase the oven temperature to 400°F (205°C) and return the ribs to the oven for 10-15 minutes (PT15M) until the glaze is caramelized and sticky.

7. Finish and Garnish: Once removed from the oven, let the ribs rest for 5 minutes. Sprinkle with chopped peanuts, sliced Fresno chili, green onions, and fresh cilantro.

8. Serve: Cut the ribs into individual portions and serve hot.
