Oven-Roasted Asparagus with Goat Cheese and Toasted Pine Nuts
Ingredients
- 1 pound fresh asparagus, trimmed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 ounces goat cheese, crumbled
- 1/4 cup pine nuts
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh chives, chopped (optional)
Instructions
1. Preheat the Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare the Asparagus:
- Wash and trim the asparagus by snapping off the woody ends. Arrange the asparagus in a single layer on a baking sheet.
3. Season the Asparagus:
- Drizzle the olive oil evenly over the asparagus. Sprinkle with salt and freshly ground black pepper. Toss the asparagus gently with your fingers to ensure they are evenly coated.
4. Roast the Asparagus:
- Place the baking sheet in the preheated oven and roast for PT15M (15 minutes) until the asparagus is tender and slightly crisped on the edges.
5. Toast the Pine Nuts:
- While the asparagus is roasting, heat a small, dry skillet over medium heat. Add the pine nuts and toast them for PT3M (3 minutes), stirring frequently, until they are golden brown and fragrant. Be careful not to burn them. Remove from the skillet and set aside.
6. Assemble the Dish:
- Once the asparagus is roasted, remove the baking sheet from the oven. Drizzle with lemon juice and sprinkle lemon zest over the asparagus.
7. Add Goat Cheese and Pine Nuts:
- Scatter the crumbled goat cheese and toasted pine nuts on top of the asparagus. Optionally, garnish with freshly chopped chives.
8. Serve:
- Transfer the asparagus to a serving platter or serve directly from the baking sheet. Serve warm and enjoy this delightful dish.
