Ingredients

- 3 cups cooked beans (pinto or navy work well)
- 6 slices bacon, diced
- 1 cup diced summer sausage
- 1 cup diced ham
- 6 hot dogs, sliced

Vegetables Aromatics:
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 carrots, diced
- 1 (10 oz) can Rotel tomatoes with green chilis
- 1/4 cup sliced jalapenos

Sauces and Seasonings:
- 1/4 cup brown sugar
- 1/4 cup molasses
- 2 tablespoons honey
- 2 tablespoons maple syrup
- 1/4 cup apple cider vinegar
- 1 cup ketchup
- 1 tablespoon Worcestershire sauce
- 2 tablespoons Dijon mustard
- 2 tablespoons yellow mustard
- 2 tablespoons white vinegar
- 1 cup tomato sauce

Instructions



1. Prepare Ingredients:
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add the diced bacon and cook until crispy. Remove with a slotted spoon, leaving the fat in the pan.
- Add the diced onions, green bell pepper, and diced carrots to the bacon fat. Sauté until the onions become translucent and the vegetables soften, about 5 minutes.

2. Combine Ingredients:
- In a large oven-safe pot or Dutch oven, combine the cooked beans, sautéed vegetables, cooked bacon, summer sausage, diced ham, and sliced hot dogs.
- In a separate bowl, whisk together brown sugar, molasses, honey, maple syrup, apple cider vinegar, ketchup, Worcestershire sauce, Dijon mustard, yellow mustard, white vinegar, and tomato sauce. Mix until smooth and integrated.

3. Assemble and Roast:
- Pour the sauce mixture over the bean and meat medley. Stir well to combine all ingredients.
- Add the can of Rotel tomatoes and sliced jalapenos. Stir gently to integrate these final touches.
- Cover the oven-safe pot or Dutch oven and place it into the preheated oven.

4. Cook the Dish:
- Bake in the oven for approximately 1 hour, stirring halfway through, to ensure that flavors meld together and the sauce thickens.
- Optionally, remove the cover for the last 10-15 minutes for a thicker consistency.

5. Serve and Enjoy:
- Remove from the oven and let it rest for about 5 minutes before serving.
- Serve hot, garnishing with fresh herbs if desired.
