Oven-Roasted Basil-Banana-Baked Apples with Potatoes and Onions
Ingredients
- 2 medium bananas, peeled and sliced
- 2 medium apples, cored and sliced
- 3 tablespoons fresh basil, finely chopped
- 4 medium potatoes, peeled and cubed
- 2 medium onions, sliced
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Preheat the oven:
- Preheat your oven to 400°F (204°C).
2. Prepare the baking sheet:
- Line a large baking sheet with parchment paper or lightly coat it with non-stick cooking spray to prevent sticking.
3. Prepare the potatoes and onions:
- In a large bowl, combine the cubed potatoes and sliced onions. Drizzle with 2 tablespoons of olive oil, add salt and pepper to taste, and mix well to evenly coat the vegetables.
4. Roast the potatoes and onions:
- Spread the potatoes and onions evenly on the prepared baking sheet. Roast in the preheated oven for about PT30M (30 minutes), stirring halfway through for even cooking. They should be golden and starting to crisp.
5. Prepare the bananas and apples:
- In the same bowl used for potatoes and onions, combine the sliced bananas and apples. Add the remaining tablespoon of olive oil, chopped basil, and a pinch of salt. Toss gently to coat.
6. Combine and roast:
- Add the banana-apple mixture to the baking sheet with the partially roasted potatoes and onions. Spread everything evenly. Return to the oven and roast for an additional PT15M (15 minutes), or until the bananas are caramelized and the apples are tender.
7. Garnish and serve:
- Once done, remove the baking sheet from the oven. Let it cool slightly, then transfer to a serving platter. Garnish with extra fresh basil if desired and serve warm.
