Oven-Roasted Basil Chicken Salad Tartines
Ingredients
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon sherry vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup sun-dried tomatoes, chopped
- 3 cups shredded cooked chicken
- 1/2 cup grated Parmesan cheese
- 1 large shallot, finely diced
- Fresh basil leaves, for garnish
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare the Chicken Mixture:
In a large mixing bowl, combine the mayonnaise, Dijon mustard, sherry vinegar, garlic powder, dried basil, kosher salt, and black pepper. Whisk until smooth.
3. Add Main Ingredients:
Add the shredded cooked chicken, chopped sun-dried tomatoes, grated Parmesan cheese, and diced shallot to the mayonnaise mixture. Stir until all ingredients are well combined and evenly coated.
4. Assemble the Tartines:
Using thick-sliced artisan bread or your favorite bread type, spoon a generous portion of the chicken mixture onto each slice. Spread it evenly to cover the surface but avoid the edges from draping over.
5. Roast in the Oven:
Arrange the tartines on the prepared baking sheet. Place in the preheated oven and roast for about 10–12 minutes, or until the top is golden brown and heated through.
6. Garnish and Serve:
Once roasted, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
